【明報專訊】薯仔存放久時常會發芽，不少人以為只要將芽切去便可照吃如儀，但食環署研究發現，薯仔芽所含的天然毒素「甙生物鹼」，高出「不損健康」食用水平75倍，若市民未能徹底去除薯芽及皮
層下的毒素，隨時出現嚴重胃痛、惡心和嘔吐等中毒徵狀。
另外，常用以混入麵包烘製的新興健康食品亞麻籽，以及北杏、竹筍、木薯等，亦含有天然毒素「氰甙」，若未經沸水徹底煮熟而進食，可在數分鐘內導致急性中毒，外國亦有生吃10粒北杏而中毒個案。
薯芽含「甙生物鹼」煮沸不能分解
食物安全中心指出，很多食用植物都含有天然毒素（見表），但透過以沸水徹底煮熟，部分毒素也可被去除，惟薯仔含有的「甙生物鹼」卻不能在煮沸過程分解。中心從市面抽取5種薯仔（新薯、褐色薯、紅皮薯、黃皮薯和黃皮腰薯）化驗，結果顯示當中的甙生物鹼含量為26至88mg/kg，平均56mg/kg，符合聯合國糧食及農業組織及世衛聯合食物添加劑專家委員會認為的「不會影響健康範圍」，即20至100mg/kg。
若薯仔已變綠或發芽，毒素便激增數十倍，其中以薯仔芽含毒量高，達7600mg/kg。何玉賢指出，雖然薯仔的毒素多集中在皮和芽，但市民不要以為將之切去一樣可食用，因他們未必徹底去清含毒的部分。他呼籲市民不要購買發芽變綠薯仔，業界亦勿以此壞材料製薯條薯片等，但市民單憑口感較難分辨薯仔有否發芽，其一分別是毒素含量高的薯仔或帶有苦味。
多種植物高溫煮沸可除毒
食物安全中心亦抽取了北杏、竹筍、木薯和亞麻籽作天然毒素「氰甙」化驗，結果顯示有含量介乎9.3至330mg/kg不等。
何玉賢解釋，若將上述植物去皮、浸泡、切細，然後用沸水徹底煮15至20分鐘，其實以可去除九成氰甙，如採用烘焗或用低水分的烹調方法，則必須少吃。外國亦有文獻記載，生吃北杏10粒可致中毒，而亞麻籽則要連吃30茶匙才會導致急性中毒。此外，常用以製作沙律的紅腰豆、白腰豆所含的「植物血球凝集素」，以及紅心椰菜含有的「致甲狀腺腫物質」，都必須經過高溫煮沸，才能去除。
